Chicken Skewers

Ingredients

  • 60g or 1/4c olive oil
  • 80g or 1/3c soy sauce
  • 60g or 1/4c honey
  • 1 clove garlic, minced
  • pinch each of salt and pepper
  • 500g boneless skinless chicken breasts cut into 1 inch pieces
  • 2 capsicums (whatever colours you like), cut into 1 inch pieces
  • 2 small zucchini, cut into 1 inch slices
  • 1 red onion, cut into 1 inch pieces

Method

  1. Place the olive oil (60g), soy sauce (80g), honey (60g), garlic (1 clove), and salt and pepper in a large bowl. Whisk to combine.
  2. Add the chicken (500g), capsicum (2), zucchini (2), and red onion (1) to the bowl. Toss to coat in the marinade.
  3. Cover and refrigerate for at least 1 hour, or up to 8 hours.
  4. Soak wooden skewers in cold water for at least 30 minutes. Preheat barbeque skillet to medium high heat.
  5. Thread the chicken and vegetables onto the skewers.
  6. Cook for 5-7 minutes on each side or until chicken is cooked through.
