Chicken Skewers

Ingredients
- 60g or 1/4c olive oil
- 80g or 1/3c soy sauce
- 60g or 1/4c honey
- 1 clove garlic, minced
- pinch each of salt and pepper
- 500g boneless skinless chicken breasts cut into 1 inch pieces
- 2 capsicums (whatever colours you like), cut into 1 inch pieces
- 2 small zucchini, cut into 1 inch slices
- 1 red onion, cut into 1 inch pieces
Method
- Place the olive oil (

), honey (60g
), garlic (1 clove
), and salt and pepper in a large bowl. Whisk to combine.
- Add the chicken (
500g
), capsicum (2
), zucchini (2
), and red onion (1
) to the bowl. Toss to coat in the marinade.
- Cover and refrigerate for at least 1 hour, or up to 8 hours.
- Soak wooden skewers in cold water for at least 30 minutes. Preheat barbeque skillet to medium high heat.
- Thread the chicken and vegetables onto the skewers.
- Cook for 5-7 minutes on each side or until chicken is cooked through.
