In a small bowl, whisk together the flour (1 cup), baking powder (2 tsp), salt (1/2 tsp), rolled oats (1/2 cup), and coconut (1/2 cup). Make a well in the center.
Add milk (1 cup), butter (2 tbsp), egg (1), and golden syrup (3 tbsp). Whisk wet and dry ingredients together until well combined (do not overmix, a few small lumps are fine).
Heat a nonstick pan over medium heat. Grease with butter. Ladle the batter onto the pan and cook until the surface of the pancake starts to bubble, about 3 minutes. Flip carefully with a spatula, and cook until browned on the underside, about 1-2 minutes more.
