Spaghetti Bolognese

Ingredients

  • 1 large brown onion, finely diced
  • 4 garlic cloves, minced
  • 4-5 skinny carrots, diced
  • 5 celery stalks, diced
  • 500g beef mince
  • 1 cup red wine
  • 1 serve beef stock (experiment with 1-1.5tsp Vegimite and 1cup water)
  • 800g (big) can of crushed tomatoes
  • Pinch oregano
  • 3 bay leaves
  • 3tbsp of tomato paste

Method

  1. Add onion (1), minced garlic (4 cloves) and a couple of teaspoons of oil to a large saucepan set to medium. Cook until soft.
  2. Add in carrots (4-5) and celery (5 stalks) and soften.
  3. Turn up temperature to medium-high and add mince (500g). Cook until browned.
  4. Add red wine (1 cup) and cook off alcohol.
  5. Add in beef stock (1 cup), tomatoes (800g), bay leaves (3), oregano (pinch), tomato paste (3tbsp).
  6. Cook off some liquid, then simmer, covered, for 30mins or until thick.
