Jessie's Granola Bars

Ingredients

  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/2 cup slivered almonds
  • 50g butter
  • 75g honey
  • 1 tbsp brown sugar
  • 3/4 tsp vanilla extract
  • 1/8 tsp kosher salt
  • 3/4 cup dried fruit (raisins, craisins, dates, etc)

Method

  1. Preheat oven to 350°F/180°C. Mix the rolled oats (1 cup), coconut (1/2 cup), and almonds (1/2 cup) in a bowl and spread evenly on a baking sheet. Bake for 12-15 minutes, stirring every 5 minutes until nicely roasted.
  2. Place butter (50g), honey (75g), brown sugar (1 tbsp), and vanilla (3/4 tsp) in a saucepan over medium heat. Cook until sugar is dissolved and everything is well-combined.
  3. Mix toasted oat mixture with butter mixture in a bowl and stir until well combined. Add dried fruit (3/4 cup) and salt (1/8 tsp).
  4. Press the mixture into a loaf pan lined with parchment paper or foil. Freeze for one hour. Cut up into 8 pieces and enjoy!
